From the mist-lined peaks of Cairo in Valle del Cauca, where cool mountain air and rich volcanic soil shape some of Colombia’s most expressive coffees, comes a rare and boundary-pushing microlot from visionary producer Edwin Noreña.
This coffee features the legendary Sudan Rume variety, known for its wild florals, silky mouthfeel, and layered complexity. Elevated even further through a meticulous and innovative process, this lot undergoes a black honey mossto lactic fermentation, where fruit-rich coffee “must” guides a controlled fermentation. The addition of Enigma hops introduces aromatic nuance and a modern craft-fermentation flair reminiscent of fine natural wines and experimental ales.
